Tex Mex Chicken Soup

Hi guys!

Last night I came up with a pretty awesome recipe. I was really in the mood to go out for Mexican, but I have so much fresh groceries that I would hate to see go to waste. With everything I had, I decided to make a Tex Mex chicken soup. I’m not sure if there’s too much of a difference between this and chicken tortilla soup (other than the tortillas). This was my first attempt at making anything like this, so I was obviously surprised at how yummy it came out! I’m not going to lie, I totally screwed this up and then had to start over. Clearly I’ve never used dried beans before because  I figured I could just throw some in my pot and let it cook. No I did not rinse them. Rookie mistake! When I went to taste my soup, it tasted like dirt. Gross! So I started over without the beans. It ended up coming out soo good (which I was really doubting how good it would be after tasting a mouth full of dirt for the first batch)!


  • Chicken ( I used 3 breasts)
  • 1/2 cup of onions
  • 1 handful of fresh cilantro (chopped)
  • 1 1/2 cups of fresh chopped tomatoes
  • 1/2 bag frozen corn
  • 1 1/2 cups fresh red, yellow, and orange peppers
  • 4 cups chicken stock
  • 4 cups water
  • 2 tbsp chile powder
  • 1 tbsp cumin powder
  • 1 tbsp paprikia
  • 1 tbsp cajun seasoning
  • 1-2 tbsp minced garlic
  • S&P to taste
  • (Top with fresh avocado and shredded mexican cheese)


  • Put all ingredients into a pot and cooked (covered) on high for about 10 minutes (or until chicken looks cooked)
  • Reduce heat to med-low and leave it alone for about an hour
  • Take out the chicken breast and put aside in a bowl
  • With a fork, shred the chicken and put it back into the pot
  • Let it simmer until you are ready to eat
  • Top with cheese and avocado and a pinch of fresh cilantro
