Sweet Potato Chicken Soup

Happy Sunday! Sorry I’ve been MIA these last few weeks. I’ve been crazy busy with playdates, getting the hang of cloth diapering, and starting my business. I will keep you all informed as to when I will be opening up shop in a few weeks! So this week, Cal has caught a nasty little cold. Perfect excuse to make a big batch of chicken soup! He absolutely loved it too. He ate this for 4 days straight and gobbled it down every time…This kid will eat anything off a fork or spoon, but I like to think he enjoys my cooking 🙂 So this is my new favorite recipe for chicken soup. It came out so good and I pretty much winged it with what I had in the kitchen. I love when that happens! The sweet potato in the soup adds an extra punch of vitamin C for when you’re sick. This is a noodle-less recipe. Not like me, usually i take the first excuse to put pasta in any meal, however, this recipe was perfect without it! I hope you guys enjoy!

Ingredients

  • 1 large pack of breast or thigh meat chicken (Skin off)
  • Better than Bouillon chicken flavor
  • Water
  • Carrots
  • Sweet potato
  • Quinoa
  • Peas
  • Onions
  • salt&pepper

Directions

  • Take your pack of chicken meat and wash while peeling the skin off (trust me, it makes it much easier when de-boning the chicken)
  • Put your chicken in a large pan and cover until it is one inch above with water
  • Add 2 tbsp of Better than Bouillan (it really gives it a great flavor at the end)
  • Add chopped onions and cook on medium heat for 2 hours
  • When the chicken meat is falling off the bone, take it out and let it cool before de-boning
  • Set chicken aside
  • Add chopped carrots, sweet potatoes, quinoa, and peas and cook on med-high for about 10-15 minutes or until the sweet potatoes are cooked through
  •  Put your chicken back into the soup and add salt and pepper (i use sea salt)

We got some three cheese asiago bread from The Fresh Market and had it with our soup. It paired so nicely. I liked to chop up pieces of the bread and put it in the soup like croutons. It was soooo good. I’m craving this soup now…. I might have to make it again this week! Have a wonderful rest of your weekend! Xo
