Quick and Easy Breakfast Casserole

This Easy Breakfast Casserole is sure to be a hit in your home. It is the perfect meal for any time of day. I usually make this recipe for dinner because I love breakfast for dinner nights in our home. (I always make extra so we can have some for breakfast the next day. It’s quick, easy, delicious, and my picky eater toddler scoffs it down! (This recipe is even better with fresh spinach or mushrooms and your favorite cheese)

  1. 2 large russet potatoes
  2. 7 Eggs
  3. 3/4 cup of half & half
  4. 3/4 log Jimmy Dean breakfast sausage
  5. 5-7 strips of bacon
  6. 1/2 large yellow onion
  7. Seasoned Salt
  8. Pepper
  9. Garlic (minced or powdered)
  1. Start by dicing and par-boiling the potatoes
  2. Brown the sausage and onions
  3. Cook the bacon until ALMOST cooked through
  4. When the potatoes are 3/4 of the way cooked (they will still feel a bit hard) drain and mix with butter, seasoned salt, pepper, and garlic
  5. Whisk eggs with half & half until completely mixed
  6. put the seasoned potatoes, sausage, bacon, onions, and any vegetables (optional) in a casserole dish
  7. Pour the egg mixture over the top
  8. Sprinkle Salt & Pepper and cheese (optional) on top
  9. Bake at 375 covered for 40-45 mins until it is bubbling
