Hidden Veggie Cheddar Bacon Turkey Meatloaf

Do you know what it’s like dealing with a picky toddler? I feel like I have constant anxiety that my little man isn’t going to get the nutrition he needs. At least once a week, I make a dinner that is packed with veggies and this happens to be my all time favorite. It has so much flavor and after processing the fresh veggies, my son eats these little meatloaf’s with a smile (and so do I!). The bacon and cheddar on top are the icing on the cake to this delicious mini turkey meatloaf recipe. This recipe can also be made into meatballs or burgers. I hope ya’ll enjoy as much as me and my little family do!

Hidden Veggie Cheddar Bacon Meatloaf; Picky Eater Approved

Ingredients
  1. 1 lb Ground Turkey (Ground Beef can be substituted)
  2. 1/2 medium sized yellow onion
  3. 1/2 green or red pepper
  4. 2/3 cup shredded carrots
  5. 2 large handfuls of spinach
  6. 1 tsp minced garlic
  7. salt and pepper
  8. 1 tbsp worchestershire sauce
  9. 2/3 c breadcrumbs
  10. 1 large egg
  11. sharp cheddar cheese and bacon (optional)
  12. FOR THE SAUCE
  13. ketchup
  14. brown sugar
  15. worchestershire sauce
  16. brown mustard (I use spicy brown)
Instructions
  1. Put the onion, pepper, carrots, and spinach in the food processor. (I like to process it to very small pieces, so my son doesn't notice)
  2. In a bowl, mix the turkey meat, processed veggies, garlic, worchestershire sauce, breadcrumbs, egg and salt and pepper
  3. Form them into one large or 6 personal sized meatloafs and set aside on a broiler pan
  4. For the sauce, mix the ketchup, brown sugar, mustard, and worchester sauce together
  5. Coat each loaf with the sauce and top with cheddar and bacon (optional, but it tastes so darn good!)
  6. Bake for 30-40 minutes or until the bacon is fully cooked (if making one large meatloaf, you may need to add time)
Notes
  1. These can also be made into meatballs or burgers!
