Easy Bolognese | Quick and Easy Healthy Dinner

Here’s an easy dinner for ya’ll. Pasta always seems like my go-to meal as I’m sure that is the general consensus. As most of you may know, we struggle with a picky eater in our house. Any meal I make, I’m trying to find where I can add in some good veggies. Any type of pasta sauce is perfect for this! I typically add carrots, peppers, and mushrooms to my sauces after putting them through my food processor.


Quick and Easy Bolognese

A delicious semi-homemade quick and easy bolognese recipe that is packed with veggies that is sure to be a fan favorite in your household.

  1. Large Handful of carrots
  2. Large handful of spinach
  3. 1 onion
  4. 1 Pack of mushrooms
  5. 1 Large green pepper
  6. 1 lb Ground Beef ( or half ground beef half ground pork - my favorite )
  7. 1 tbsp minced or fresh garlic
  8. Jar of your favorite tomato sauce ( I use organic marinara sauce )
  9. 1-3 Basil leaves chopped
  10. EVOO
  11. Red wine (optional)
  1. Process the carrots, onion, mushrooms, and green pepper
  2. sauté the veggies and spinach in evoo, garlic, and a pinch of salt and pepper & set aside
  3. brown the meat, drain the fat, and add the veggies back in and simmer for 1-3 minutes
  4. Add a jar of your favorite tomato sauce and the basil
  5. OPTIONAL but Recommended) add 1/3 cup of red wine
  6. Simmer for 20-25 minutes
  7. Serve with your favorite pasta and garlic bread or bruschetta
