Easy Bolognese | Quick and Easy Healthy Dinner

Here’s an easy dinner for ya’ll. Pasta always seems like my go-to meal as I’m sure that is the general consensus. As most of you may know, we struggle with a picky eater in our house. Any meal I make, I’m trying to find where I can add in some good veggies. Any type of pasta sauce is perfect for this! I typically add carrots, peppers, and mushrooms to my sauces after putting them through my food processor.

Meal Planning Made Easy | Terra’s Kitchen

I recently was invited to attend an event hosted by Terra's Kitchen in downtown Raleigh. I don't get many nights out these days, so I took the opportunity and boy am I glad I did! It actually was the first time I have heard about Terra's Kitchen, as it is a relatively new company. If you're not familiar with Terra's Kitchen, it is a meal-kit delivery service; but has a philosophy that really stood out to me against its competitors. (Blue Apron, Hello Fresh, Etc.) One of their main goals is focused on bringing families back to the table; by taking the stress and time spent in planning and prepping dinner, ultimately leaving more time for the family.

I wasn't too sure what to expect at the event, but I left feeling more excited than ever to try more of their meals. The meal that we were served was their sweet potato tacos. Sweet potatoes being an ingredient I wouldn't typically run to when trying to put together a taco night. I was really surprised at how much I loved them and it put sweet potatoes in a totally new light for me.

I know I'm not alone when I say that when it comes to trying to put together a meal plan, I often default to a handful of the same meals. For me, my biggest struggle lies in the creative department. I can pin and pin recipes for days, but they usually are left forgotten.


Terra's Kitchen has so many meals you can choose from and they are always changing and adding more. Unlike it's competitors, you can choose each individual meal instead of a pre-selected meal plan for the week. If you have any type of dietary restrictions, you can filter out meals that don't meet those restrictions. (gluten free, vegetarian, vegan, paleo, etc.) You also have the option to add extra ingredients, snacks, and even smoothies to your vessel. GIVE ME ALL THE HUMMUS! I love how if you really enjoy their meal service, you can set up a weekly delivery and based on your past meal choices and any dietary needs or restrictions, they will automatically choose some for you. If you want anything changed, it's easy to edit your meals before they are sent out.

One thing they pride themselves on is their quality of ingredients. Terra’s Kitchen uses ingredients that are antibiotic- and hormone-free, as well as non-GMO and even sometimes organic. I noticed that when I I ordered our meals for the week, it ended up being the same amount, if not cheaper than if I had gone to the grocery store for a week of dinners.

So, now on to my first vessel! (Yes you get your own refrigerated vessel.) When I first heard about this, I was excited but also unsure how it would work. Literally, all you have to do is unload the ingredients into your fridge, and peel the address label off. Underneath is a return label and you just put it right outside your front door. A pickup is scheduled the following day and is gone the next morning. The best part? These vessels are recycled and are used over and over a bunch of times. No more big wasteful boxes and ice packs!

I also ordered the Grilled Chicken Tacos with Avocado Goat Cheese Sauce ( Not sure why they don't offer this anymore because it was my favorite!)

From start to finish, each meal took me about 8 minutes or less to put together; and about 30 minutes to cook.


Having the ingredients already chopped and ready to go was a HUGE time saver and gives you the option to let your kids help with the process without the chaos. (Normally, by the time it takes to get everything chopped and set up when my son wants to help, he's already over it.)

I was extremely impressed with not only the quality of the ingredients, but how fresh they all were. Each meal was incredibly unique by using simple and healthy ingredients. If you're constantly struggling to fill your table with something delicious and healthy, give them a try. It's worth it.

Quick and Easy Breakfast Casserole

Hidden Veggie Cheddar Bacon Turkey Meatloaf

Do you know what it’s like dealing with a picky toddler? I feel like I have constant anxiety that my little man isn’t going to get the nutrition he needs. At least once a week, I make a dinner that is packed with veggies and this happens to be my all time favorite. It has so much flavor and after processing the fresh veggies, my son eats these little meatloaf’s with a smile (and so do I!). The bacon and cheddar on top are the icing on the cake to this delicious mini turkey meatloaf recipe. This recipe can also be made into meatballs or burgers. Farmhouse Chowder

Hey guys! So now that it’s started to get really cold out, that means its officially SOUPS, CHOWDERS, and CASSEROLES season. My favorites! I’ve got a super easy recipe for ya’ll to try this winter. And even better, It’s completely homemade! No junk in this one. It reminds me of chicken pot pie but as a chowder. It’s soooo yummy and will give you tons of leftovers that you can even freeze! Biscut Apple Mushroom Stuffing

Hey guys! After trying this homemade stuffing or “dressing” recipe, you’ll never want to buy the box ever again. It was just as quick to make, except it tasted 50000x better! The BEST Chili Recipe Ever :)

Hey Guys! So, I am BEYOND excited to share with you my most recent chili recipe! I kind of “winged” it with what I had at the house, and it came out amazing. I’m just going to call it “The Best Chili Recipe Ever!” I cut a lot of the fat out by using lean ground turkey instead of beef. I also added pulled pork, which was the perfect combo. Instead of using canned tomato sauce, I pureed a bunch of fresh tomatoes from the farmers market. It tasted so much fresher that way, and I won’t be using canned tomato sauce ever again! (Which I probably will when tomatoes are not in season, but I can keep thinking that 😉 I hope you guys enjoy it as much as we did!
