Here’s an easy dinner for ya’ll. Pasta always seems like my go-to meal as I’m sure that is the general consensus. As most of you may know, we struggle with a picky eater in our house. Any meal I make, I’m trying to find where I can add in some good veggies. Any type of pasta sauce is perfect for this! I typically add carrots, peppers, and mushrooms to my sauces after putting them through my food processor.
I recently was invited to attend an event hosted by Terra's Kitchen in downtown Raleigh. I don't get many nights out these days, so I took the opportunity and boy am I glad I did! It actually was the first time I have heard about Terra's Kitchen, as it is a relatively new company. If you're not familiar with Terra's Kitchen, it is a meal-kit delivery service; but has a philosophy that really stood out to me against its competitors. (Blue Apron, Hello Fresh, Etc.) One of their main goals is focused on bringing families back to the table; by taking the stress and time spent in planning and prepping dinner, ultimately leaving more time for the family.
I wasn't too sure what to expect at the event, but I left feeling more excited than ever to try more of their meals. The meal that we were served was their sweet potato tacos. Sweet potatoes being an ingredient I wouldn't typically run to when trying to put together a taco night. I was really surprised at how much I loved them and it put sweet potatoes in a totally new light for me.
I know I'm not alone when I say that when it comes to trying to put together a meal plan, I often default to a handful of the same meals. For me, my biggest struggle lies in the creative department. I can pin and pin recipes for days, but they usually are left forgotten.
Terra's Kitchen has so many meals you can choose from and they are always changing and adding more. Unlike it's competitors, you can choose each individual meal instead of a pre-selected meal plan for the week. If you have any type of dietary restrictions, you can filter out meals that don't meet those restrictions. (gluten free, vegetarian, vegan, paleo, etc.) You also have the option to add extra ingredients, snacks, and even smoothies to your vessel. GIVE ME ALL THE HUMMUS! I love how if you really enjoy their meal service, you can set up a weekly delivery and based on your past meal choices and any dietary needs or restrictions, they will automatically choose some for you. If you want anything changed, it's easy to edit your meals before they are sent out.
One thing they pride themselves on is their quality of ingredients. Terra’s Kitchen uses ingredients that are antibiotic- and hormone-free, as well as non-GMO and even sometimes organic. I noticed that when I I ordered our meals for the week, it ended up being the same amount, if not cheaper than if I had gone to the grocery store for a week of dinners.
So, now on to my first vessel! (Yes you get your own refrigerated vessel.) When I first heard about this, I was excited but also unsure how it would work. Literally, all you have to do is unload the ingredients into your fridge, and peel the address label off. Underneath is a return label and you just put it right outside your front door. A pickup is scheduled the following day and is gone the next morning. The best part? These vessels are recycled and are used over and over a bunch of times. No more big wasteful boxes and ice packs!

I also ordered the Grilled Chicken Tacos with Avocado Goat Cheese Sauce ( Not sure why they don't offer this anymore because it was my favorite!)
From start to finish, each meal took me about 8 minutes or less to put together; and about 30 minutes to cook.
Having the ingredients already chopped and ready to go was a HUGE time saver and gives you the option to let your kids help with the process without the chaos. (Normally, by the time it takes to get everything chopped and set up when my son wants to help, he's already over it.)
I was extremely impressed with not only the quality of the ingredients, but how fresh they all were. Each meal was incredibly unique by using simple and healthy ingredients. If you're constantly struggling to fill your table with something delicious and healthy, give them a try. It's worth it.

Hey Guys! So a little while back, I discovered these awesome placemats and bowls for kids. This Easy Breakfast Casserole is sure to be a hit in your home. It is the perfect meal for any time of day. I usually make this recipe for dinner because I love breakfast for dinner nights in our home. (I always make extra so we can have some for breakfast the next day. It’s quick, easy, delicious, and my picky eater toddler scoffs it down! (This recipe is even better with fresh spinach or mushrooms and your favorite cheese)
I've got some tips on How To Reason With Your Toddler. Sometimes it's not so easy when it comes to reasoning with a stubborn little human being. If you can't tell, I clearly have some experience in this department. My son is a very strong willed little man. It has taken a lot of time and patience in the last couple years and finally I feel like I have come to a point where I am able to sway situations in my favor; most of the time. Of course, anything I ask of him is an astounding, NO! But we have come a long way.
GIVE THEM CHOICES
Things have gotten easier once I started giving my son some choices. He knows that if he refuses to do something, say, eat his vegetables or go potty when I ask, he can choose to go to bed instead. You can use time out, bed time, or anything they would rather not do as your other choice. By doing this, it makes them feel in control because they chose the latter. It's when they say, "Okay, Nunight Mama" is when you're really screwed. If this happens, follow through and then go get them after a few minutes. (This is a trick I was taught by my awesome sister in law. She's got some great ideas up her sleeve. Check her out!)
Most times, toddlers just want to do what they want. If you explain to them why they can't do something, it might make them understand a bit better. Toddlers are like little sponges, they remember pretty much EVERYTHING! If you make it a habit to explain things in a way they can understand, they may stop asking to do things they shouldn't. Or not. It's a toss up.
If the top two don't help, redirecting your toddler usually works wonders. For example, we go to Target A LOT. Literally every time we walk through those big red doors, my son starts chanting "CAKE POP, CAKE POP, CAKE POP" while pointing at Starbucks. He slowly but surely gets louder and louder until a tantrum is moments from happening. Now, I'm totally not against cake pops; however, if we indulge in one, I know nap time is out the window for the day. And that's not cool. So, instead of giving in, I will redirect him into helping me pick out a snack or maybe even a little toy that he can have. At the moment, he's obsessed with Disneys Tsum Tsum's. You know, the ones that look like hamster shaped Disney characters? That's my go-to redirection, and for now, it works like a charm. For the low cost of $2.99, and the fact that it keeps him occupied and happy for my entire shopping trip, I call it a MOM WIN!
Unfortunately, there are those days that your toddler will not be down for any of these tricks up your sleeve and it will eventually turn into a time out. If you're out in public, although it's totally a pain in the butt, pick up your little one and explain to them that they have to leave because of their behavior. Bring them to the car and buckle them in until they calm down and explain that they are in time out. Revert back to my first piece of advice and give them the choice of going home or returning back to the store. Hopefully they don't choose home, because then you're screwed! ;-p
