Here’s an easy dinner for ya’ll. Pasta always seems like my go-to meal as I’m sure that is the general consensus. As most of you may know, we struggle with a picky eater in our house. Any meal I make, I’m trying to find where I can add in some good veggies. Any type of pasta sauce is perfect for this! I typically add carrots, peppers, and mushrooms to my sauces after putting them through my food processor.
- Large Handful of carrots
- Large handful of spinach
- 1 onion
- 1 Pack of mushrooms
- 1 Large green pepper
- 1 lb Ground Beef ( or half ground beef half ground pork - my favorite )
- 1 tbsp minced or fresh garlic
- Jar of your favorite tomato sauce ( I use organic marinara sauce )
- 1-3 Basil leaves chopped
- Red wine (optional)
- Process the carrots, onion, mushrooms, and green pepper
- sauté the veggies and spinach in evoo, garlic, and a pinch of salt and pepper & set aside
- brown the meat, drain the fat, and add the veggies back in and simmer for 1-3 minutes
- Add a jar of your favorite tomato sauce and the basil
- OPTIONAL but Recommended) add 1/3 cup of red wine
- Simmer for 20-25 minutes
- Serve with your favorite pasta and garlic bread or bruschetta
I recently was invited to attend an event hosted by Terra’s Kitchen in downtown Raleigh. I don’t get many nights out these days, so I took the opportunity and boy am I glad I did! It actually was the first time I have heard about Terra’s Kitchen, as it is a relatively new company. If you’re not familiar with Terra’s Kitchen, it is a meal-kit delivery service; but has a philosophy that really stood out to me against its competitors. (Blue Apron, Hello Fresh, Etc.) One of their main goals is focused on bringing families back to the table; by taking the stress and time spent in planning and prepping dinner, ultimately leaving more time for the family.
To be completely honest, becoming a mom of two terrified me. I remember wondering if I was ever going to be able to leave the house by myself with the kids. I honestly think I’ve survived it thus far with the help of my one particular baby gear essential. When it comes to any type of outing, you better believe I am wearing my sweet little girl in my Ergo baby carrier. It has been a lifesaver the past six months and I honestly don’t know what I would do without it.
Some of you may know, my son can be a total handful. He’s one of those toddlers that we’d categorize as a “runner.” Literally, the boy can’t be trusted. When starting a family, you and your spouse are bound to have the conversation on who’s going to stay home and raise your little ones; or what options you have for childcare. If you’re lucky, you will have family nearby that can help; however thats not always the case. In our case, we recently moved to North Carolina, where we have no family around.
Since having our first, we have decided that it is more cost effective for me to stay at home with our children. It has been such a rewarding experience to be able to spend each day with my babies, but there are some aspects that make it really hard. Before my husband and I started both of our own businesses this past year, we have decided to forego gifts for each other and put our extra funds towards our growing businesses. This is so tough for me because I pride myself on my gift giving skills. I truly enjoy splurging on the perfect gift for my loved ones. After having our children, my Mama bear budgeting instincts went into full effect; splurging on ourselves isn’t even in our vocabulary these days.
Hey Guys! So a little while back, I discovered these awesome placemats and bowls for kids. They are made by EZ PZ (you may recognize them from the show Shark Tank) and since purchasing them, our old plastic kids plates and bowls have been in the back of our cabinets collecting dust. These are completely microwavable, dishwasher safe, and they suction to the table! (TAKE THAT BOWL DUMPING TODDLER!) My son is one of those kids that has to have every piece of food separated in its own little spot, so he loves these just as much as I do.
